PIE DAY!!

And we’re back! Tomorrow, January 23rd, is National Pie Day! No, not Pi Day, that’s on March 14th (you know, 3.14159β€”). Pie Day is a day set aside to bake and eat all your favorite pies! A great way to celebrate is to bake some pies and give them away to your friends and family!

National Pie Day was created by the American Pie Council in 1986 to commemorate Crisco’s 75th anniversary of “serving foods to families everywhere.”

So, in honor of this great day, here’s a pie recipe that hopefully won’t make that belt any tighter!

Chocolate Chip Peanut Butter Pie

Ingredients:

Β½ Cup reduced-fat peanut butter

4 oz. light cream cheese

4 oz fat-free cream cheese

12 oz fat-free sweetened condensed milk

2 Tbsp fresh lemon juice

1 Cup lite whipped topping, thawed if frozen

5 Tbsp mini chocolate chips, divided

6 oz pie crust

Instructions:

In a large bowl, using an electric mixer, beat together peanut butter and both types of cream cheese until smooth. Gradually beat in milk and lemon juice; fold in whipped topping and 4 tablespoons of mini chocolate chips.

Spoon peanut butter mixture into prepared pie crust and smooth top. Chop remaining tablespoon of chocolate chips; sprinkle over top. Cover with plastic wrap and freeze until firm, at least 4 hours. Slice into 10 pieces and serve. Yields 1 piece per serving
